WHAS Mediterranean Quinoa Salad Recipe Ingredients: 1 cup quinoa 2 cups water 1 1/2 cup cucumber, peeled and diced 1 1/2 cup cherry tomatoes, quartered 1/4 cup Kalamata olives, pitted and sliced 1/4 cup green onion, sliced 1/2 - 3/4 lemon, squeezed 2-3 tablespoons extra virgin olive oil salt and pepper to taste Instructions: Rinse quinoa. Combine water and quinoa in a medium saucepan. Bring to a boil. Once boiling, reduce to low and cover. Cook for 15-20 minutes or until water is absorbed. While quinoa is cooking, prepare veggies. When quinoa is done, dump it into a large mixing bowl and let cool for 5 minutes. Mix in the rest of the ingredients. Stir. Enjoy:-) I made this recipe on WHAS 11 Great Day Live.
